Stay at home, what?!

A little brainwave, but it's been about 15 days since my last day at work for the time being... I can honestly say I am more physically drained than 40 hours of retail work. What is it about folding clothes, vacuuming, picking up toys (for the 8th time today) that mentally and physically drains someone? Don't get me wrong, I am thoroughly enjoying the time that I am able to share with my boys- I am just beat! It feels like I have more to do now that I am home, and less time to shower? Probably because I'm not planning ahead to be up before my little offspring monsters ;)

Easy Chicken Fajitas

Recently my husband and I have been trying to find ways to cut back cost, and add more time to our evenings when we're home. With him working 15 hour days, it can be difficult for him to spend the time with our two boys and I. Half the time is spent picking up from the day of (and prior) and trying to get dinner situated. I started looking up easy and quick meals online and realized duh-- use your crock pot! It had been a LONG time since I'd pulled the ol crock pot out haha! Chicken Fajitas were the first attempt! After combining (and subtracting) a couple of recipes I found, I made an attempt! DELICIOUS!! Here's a simple and easy meal to make at home!

Chicken Fajitas:
4 pieces of boneless Chicken breasts
3 Peppers. (1 Green, 1 red, 1 yellow)
1 onion
1 package of taco seasoning (I used the generic store brand that I got at winco, you can get creative)
1/2 a cup of chicken broth

The chicken I used was defrosted and I was worried about the chicken being dry (hence the half cup of chicken broth) However, if doing this with frozen chicken I would reduce the amount of chicken broth even more so the fajitas are not too wet. Cook on high for 3-4's or 6 hours on low.

After cook time, shred chicken in crock pot with two forks and cook on high for another 30 minutes. Service with Flour or corn tortillas.

Violá, that easy!
